This recipe is adapted from America’s Test Kitchen Family Baking Book.

Ham and cheese waffles are a favorite in my family and so easy to make. Whenever I have extra ham, these waffles are on the menu for dinner, often topped with a couple of fried eggs. Any leftover waffles are perfect for breakfast the next morning. These savory waffles are a must-make!

Ham and Cheese Waffle Breakdown

These waffles only need two bowls to make. First, mix the dry ingredients in a large bowl. In a separate small bowl, or directly in a large 8-cup liquid measuring cup, combine the milk, eggs, and melted butter. Add the liquid mixture to the dry ingredients and mix well, checking for any pockets of flour.

Stir in the cheese and ham. I typically use shredded cheddar cheese, but you can substitute and experiment with other cheeses. The ham should be finely chopped to ensure it mixes well—large chunks can affect the waffle’s texture. I usually use leftover deli ham we have on hand.

The ham and cheese waffles cook perfectly in my double Belgian waffle maker, but you can use any waffle maker you have. I’ve always wanted to try these on a classic thin waffle maker for a different texture. Once cooked, place the waffles on a cookie sheet and keep them warm in the oven at about 250°F until all the waffles are made. Though, of course, a few tester waffles usually get eaten in the process!

Ingredients
  

  • 4 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 3.5 cups milk any kind
  • 8 tablespoons butter melted, but cooled
  • 2 eggs
  • 6 ounces shredded cheddar
  • 6 ounces diced ham

Instructions
 

  • Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
  • Combine Wet Ingredients: In a separate bowl (or large measuring cup), mix the eggs, milk, and melted butter until combined. It’s okay if some butter chunks remain.
  • Mix Wet and Dry: Pour the wet ingredients into the dry mixture and stir until well 
  • Add Cheese and Ham: Gently fold in the shredded cheddar and chopped ham until evenly distributed.
  • Cook Waffles: Preheat your waffle maker according to its instructions. Cook the batter as directed by your waffle maker.
  • Keep Warm: Place cooked waffles on a baking sheet in a single layer and keep them warm in a 300°F oven until all waffles are made. Enjoy them as they come off the waffle maker if you can’t wait!

Notes

  • This recipe can be halved to make about 6 waffles.
  • Store waffles in an airtight container in the fridge for up to several days. Reheat in the toaster, oven, or microwave.
  • Waffles can be frozen and reheated in the oven.
  • These waffles are delicious on their own or topped with a fried egg.
  • Feel free to experiment with different cheeses—though cheddar is a family favorite.
