With wildfire season in full swing in Central Oregon, campfires were banned during our last camping trip of the summer. But s’mores are an essential part of our camping fun. Each of my kids has their own unique take on the classic s’more, so I knew we would need a s’more treat even if we couldn’t roast our marshmallows

These no-bake bars feature a thick layer of graham cracker cereal held together with a light coating of melted marshmallows and butter. Mini marshmallows and broken Hershey bars are then mixed in, making every bite taste like s’mores. No one complained when these bars were passed out after dinner each night.

Ingredients overview

The classic s’mores flavors are graham crackers, Hershey’s chocolate, and marshmallows. They’re sticky, gooey, and the chocolate never quite melts completely

  • Graham Cracker Cereal: I used Golden Grahams to capture the graham cracker flavor.
  • Mini Marshmallows: The mini marshmallows act as the glue holding everything together and are also mixed in whole to provide the full marshmallow experience.
  • Hersey’s Chocolate: Hershey’s has a distinct taste that screams s’mores. But feel free to substitute for your favorite chocolate bar.
  • Butter: The butter along with the melted marshmallows hold everything together.

How to make no bake s’mores bars

These bars are so simple to make and take less than 15 minutes. Melt the butter and the mini marshmallows (minus 2 cups) in the microwave. Every 30 second stir with the marshmallows/butter mixtures with greased spoon until it is smooth and melted. If you cube the butter it will melt at the same rate as the marshmallows.

Then stir in the cereal, scrappy the sides of the bowl well. This recipe uses a light marshmallow coating which makes it hard to stir. Once the cereal is evenly coated, stir in the chocolate and 2 cups of mini marshmallows. Then press the mixture into a well greased 9 x 13 pan.

Last, I use parchment or waxed paper to press the s’mores bars down and compress them. You can put aside some mini marshmallows and chocolate pieces to decorate the top if you want.

I like to let the bars set for a bit (20ish minutes) before cutting into them. They are gooey and want fall apart as you eat them, but they hold together slightly better when cool. If you want them to stick together more, simply reduce the amount of marshmallows you mix in at the end.

S’more ways to make

Everyone has distinct opinions on what makes the perfect s’more. Burnt or perfectly golden marshmallows? Peanut butter cups or Hershey’s bars? Oreos or graham crackers? These s’mores bars are just as customizable.

  • Roasted Marshmallows: Roast the mini marshmallows using a kitchen torch or broiler first, and then mix them in.
  • Peanut Butter: – Stir in a cup of peanut butter chips with the chocolate and mini marshmallows.
  • Candy – Add in 1-2 cups of your favorite candy- M & M’s, Reese’s Pieces, mini peanut butter cup, Rolos, etc.

No bake s’more bar storage

The no-bake s’mores bars keep for 4–5 days in an airtight container, and I dare you to have any left by the end of the week. They are best eaten within a day or two and will lose some crispness over time.

Ingredients
  

  • 8 cups Graham Cracker cereal (a full 11.7 ounce box)
  • 1 bag mini marshmallows (10 ounces)
  • 4 tablespoons butter
  • 2 Hershey's Bars (broken into pieces)

Instructions
 

  • Grease 9 x 13 pan and set aside 2 cups of mini marshmallows
  • In a large microwave-safe bowl, melt the butter and mini marshmallows together.
    Stop and stir every 30 seconds until everything is melted and smooth, about 1 minute and 30 seconds in my microwave.
  • Stir in cereal and mix well using a greased wooden spoon. Scrap the sides and bottom often to evenly coat all the cereal.
  • Mix in the broken chocolate pieces and the remaining marshmallows.
  • Scrap the cereal mixture into the prepared pan. Using parchment or wax paper, press the cereal mixture into the pan until it fills the entire pan evenly.
  • If you can manage to wait, let them set for about 20 minutes before digging in. It's hard to do, but they will hold together better than way.

Notes

  • Add in other favorite s’mores flavors, such as peanut butter chips, broken Oreo pieces, or mini peanut butter cups.
  • The recipe can be halved and made in a 9-inch square pan
  • The bars will keep for 4-5 days in an airtight container at room temperature.
  • If you want the bars to stick together a little better, only set aside 1-1.5 cups of marshmallows.
