Baked oatmeal is a favorite in my house. This recipe is easily to customize. It is chuck full of oats, nuts, and fruit and will have you feeling good all day.

This recipes is so simple and so easy to make. First, mix up all the dry ingredients in large bowl (oats, brown sugar, baking powder, salt, and spices). Next, in another bowl or a large measuring cup mix together the milk, eggs, and oil. Combine the wet and dry ingredients, then add the fruit and nuts. Bake and enjoy!



So many flavor options:
This recipe can be adapted and customized so many different ways:
Milk: Use any dairy or non dairy milk. My preference is to use Oat Milk.
Oil: Coconut and vegetable oil work well. Note that coconut oil does have a slight coconut taste.
Fruit: Two cups of fruit are needed for a full recipe. Switch up the fruit based on what i is in season. Last time I made it I used cherries and apples; the time before I used blueberries and strawberries. This recipe is a great way to use fruit that is on its last leg.
Nuts: Pair the nuts with the fruit. Apples and pears go well with walnuts, while cherries pair nicely with pecans or sliced almonds.
Dried Fruit: I love the adding dried fruit to baked oatmeal when I have some on hand. Some of my favorites are raisins, Craisins, dried blueberries, and dried cherries.
Spices: Add in a teaspoon of your favorite spice. My go to is cinnamon. Choose spices that complements the fruit.

Flavor Ideas:
Apple, walnuts, Craisins with apple pie spice
Pear, walnuts, and dried cherries
Mixed berries (blueberries, raspberries and strawberries) with pecans
Cherries, sliced almonds, and raisins with almond extract (1/4 tsp)
Peaches, walnuts, and dried blueberries

Baked Oatmeal
Ingredients
- 4 cups rolled oats
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon Cinnamon or spices
- 1/2 cup brown sugar
- 2/3 cup chopped nuts
- 2/3 cup dried fruit
- 2 cup chopped fruit or berries
- 3 cups milk or non-dairy alternative (any kind)
- 4 eggs
- 1/4 cup oil (vegetable or coconut)
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 and spray a 9 x 13 inch pan with cooking spray.
- In a large bowl mix the oats, baking powder, salt, brown sugar, and spices together.
- In a small bowl, mix the milk, eggs, and oil until well combined.
- Pour the wet ingredients into the dry and stir to combine.
- Add the nuts, dried fruit, and fresh fruit to the oat mixture. Stir until everything is evenly mixed.
- Pour into the prepared pan and bake for 35-40 minutes or it is completely set.
- Serve warm. Leftovers will keep in the fridge in an airtight container for several days.
Notes
- Half the recipe and bake in a 8 or 9 inch square pan.
- Customize with your favorite fruit and nut combinations
- You can skip the dried fruit or nuts, and simply increase the other mix-in’s
Since you posted this recipe I’ve made it twice – just love it. Easy, flexible with whatever I have on hand as far as nuts go. I love having something healthy for breakfast which also feels like a treat!!! And it is easy to take with me to eat in the car when I have to head to work really early.
